Grandma Cooney’s Lemon Pie
A classic lemon meringue pie recipe.
Juice of one lemon
3 egg yolks (save whites)
3 T. cornstartch
1 c. water
2 T butter
1 c. sugar
Put first five ingredients in kettle and stir constantly as it comes to a boil. When it’s thick, remove from stove and add sugar.
Fill one baked pie shell.
To make the meringue, beat the three egg whites until stiff. Add 1/4 c. sugar. Beat some more.
Brown meringue in the oven at 350 degrees (about 10 minutes). Watch closely.
