Rice & Raisins

Also known as Brown Sugar Rice Pudding.

1 - 1/3 c. Minute Rice (Uncooked)
1/2 c. raisins
1/2 tsp. salt
2 - 2/3 c. milk
1/2 c. firmly packed brown sugar
2 Tbsp. butter
1/2 tsp. vanilla

Combine rice, raisins, salt and milk in saucepan. Bring to a full boil, uncovered. Remove from heat. Stir in brown sugar, butter, and vanilla until blended. Cover; let stand 10-15 minutes. Serve warm or chilled.
