Black Bottom Cupcakes

Make full-size or mini versions of these rich chocolate treats.

Sift together the following:
1 1/2 c. flour
1 c. white sugar
1/4 c. cocoa
1/2 tsp. salt
1 tsp. soda

Then add the following:
1 c. water
1/3 c. oil
1 T. vinegar
1 tsp. vanilla

Beat with mixer & fill large cupcake paper 1/3 full.

Next cream 8 oz. cream cheese, softened.

Then add the following:
1 small egg
1/3 c. white sugar
1/8 tsp. salt

Beat well with mixer and add 1-6 oz. pkg. of regular chocolate chips. Put about 1 soup spoon of this on top of chocolate mixture.

Bake at 325 for 30-35 mins. Makes 24 lg. cupcakes.

To make mini cupcakes Use MINI-chocolate chips instead. Spoon into mini cupcake paper, about 1 1/2 tsp. chocolate mixture & 1/2 tsp. cream cheese mixture on top. Bake @ 325 for 17 mins. Makes 60 mini cupcakes.
